INGREDIENTS Soft butter as needed 1 cup oil 1 cup sugar 1 cup molasses 2 tbsp ginger 1 tbsp crystalized ginger (optional) 2 eggs lightly beaten 3 cups flour 1 tbsp cinnamon 1 tsp salt
DIRECTIONS Step 1: Preheat oven at 325 ° .
Grease and parchment 9x13 2” pan. Step 2 : Whisk oil, sugar, molasses and ginger. Add eggs and whisk until smooth. Step 3 : Mix flour, ginger, cinnamon, cloves and salt. Slowly whisk molasses mixture into flour mixture until combined. Step 4 : Boil water and add baking soda. Whisk into batter. Step 5 : Bake at about 45 minutes or until toothpick is clean. Cool on a rack.
